Sea Urchins
Did you know that some echinoderms are an important commercial resource? While not usually looked upon as food in the United States, sea urchins are consumed in great quantities in Asia.

Urchin roe (the sex organs of both male and female sea urchins) is exported in great quantities to Japan as a food. This site from the Sea Urchin Harvesters Association of California will fill you in on these details as well as a host of other interesting facts.
